Shrimp Scampi on the Grill 

Ingredients: 

2-3 Tablespoons of Beer

1 pound medium shrimp

¼ 4 ounce can of chopped jalapenos, drained

½ lemon

4 minced garlic cloves

3 Tablespoons butter

3 Tablespoons fresh parsley, chopped

½ tsp. lemon-pepper seasoning

Fire up the grill to medium hot.  Form a foot-long sheet of foil into a bowl.  Pour in the beer.  Dump everything else into the foil and crumple the top to make a shiny metal ball. Grill for 5 to 10 minutes, or until the shrimp are bright pink on the outside and a little filmy and moist in the middle. Serve with the juices over pasta.
