
Strawberry Triumph Pie
Recipe from Good Housekeeping Cookbook, circa 1956
Ingredients
1 Quart rinsed, hulled Strawberries
3 TBS. Cornstarch
1 Cup Sugar
2 TBS. Fresh, frozen or bottled lemon juice
1 8-Inch Graham Cracker Crust
Filling
ƒá With fork, crush ½ the strawberries
ć Stir in cornstarch, sugar and lemon juice
ć Cook over medium heat, stirring, until thickened and clear
ć Cool
ć Cut rest of berries in half
ć Fold into cooked, cooled mixture
ć Pour into crust
ć Refrigerate
*Crust
ć 8 inch Pie Crust
ć 16 Crackers
ć 2 TBS. Sugar
ƒá ¼ cup margarine melted
ƒá Bake 8-10 minutes at 350°, watch it
ć Cool
*Or, just use the pre-made graham cracker crusts from the store.
This recipe is one that my beloved mother, Kate Aldrich, has made for my family for over 50 years. We still enjoy it at family gatherings, especially around the 4th of July. It's especially good topped with whipped cream, or Redi-Whip. A real summer pleaser!

Mango Guacamole
2 Ripe Avocados (Cut into 1/2 inch pieces)
1 Ripe Mango, peeled, pitted $ cut into 1/4 inch pieces
2 garlic cloves, minced
1/4 Cup fresh lime juice (about 2 limes)
1/4 Cup packed, chopped, fresh cilantro leaves
1 Serrano Chile Pepper, minced (Remove ribs & seeds if you like it less hot, or use green onions, to taste)
Coarse salt (to taste)
Instructions:
Combine all the ingredients and gentle fold together--leaving a chunky texture.
Serve with your favorite crackers or chips.
If not served immediately, cover with plastic wrap--pressing it onto the surface to protect discoloration. Refrigerate up to 2 hours.

Jane's Flank Steak Marinade
3/4 Cup Veri Veri Teriyaki Marinade Sauce by Soy Vay
(I buy it at Goodrich ShopRite)
1 Clove garlic, minced
1/4 Cup Olive Oil
2 TBS. Worcestershire Sauce
1 TBS. Red Wine Vinegar
Mix together ingredients and then pour over Flank Steak in a Zip Lock bag.
Refrigerate for 2 or more hours.
Grill to desired steak interior.

I usually have more than 5 books going at the same time (I'm a book-a-holic!) but this summer I'm reading A New Earth, by Eckhart Tolle. This is a mind-changing book that I find takes time to read, because almost every paragraph makes you go "whoa" and you need to set it down to "think."
Every summer I read an Ann Tyler book. My goal is to read all her works. She is a master of modern contemporary writers.
This summer I'm reading: Saint Maybe
And I love Barbara Kingsolver. One of my favorite summer reads of all time as an adult was Prodigal Summer. If you haven't read it, it might be the summer to do that. Barbara Kingsolver is a witty, warm and sensual writer who displays her vast knowledge of biology and ecology, intertwined with meaningful relationships and deep insights.
